Description

Premium cured vanilla beans develop a crystalline surface deposit during the proper curing process — these white crystals are vanillin (4-hydroxybenzaldehyde-3-methoxybenzaldehyde), the primary aromatic compound responsible for vanilla flavour, precipitating from the saturated solution in the bean tissue as the bean dries during curing. The presence of frost (as the crystals are called in the vanilla trade) is considered a marker of high-quality, properly cured vanilla. At 4:1 macro reproduction of a split Tahitian vanilla pod, the interior surface is visible with its coating of crystalline vanillin: the crystals appear as white, slightly angular deposits on the pale golden-brown pod interior, with the tiny aromatic seeds of the pod visible as brown specks between the crystal deposits. The pod’s internal architecture — the placentas on the interior wall from which the seeds are attached — is also visible.
