Description
Nishiki Market in central Kyoto — the ‘Kyoto Kitchen’ — is a five-block covered shopping street of 117 specialist food merchants that has operated continuously since the early Edo period (17th century) on its current site. The market’s physical characteristics are distinctive: the covered arcade is only 5 metres wide and runs for 390 metres, the resin roof panels admitting diffused natural light that creates the distinctive even illumination of the market interior without direct sun. The pre-opening preparation period — traders at work from 7am before the 9am opening — provides photography access without customer crowd interference. This image was made at 8am during the Japanese pickle and preserved food section’s preparation: the merchant is arranging the final display of 18 varieties of tsukemono pickles in their bowls and containers.
